Mother's Pumpkin Pudding
Dawn Ranck, Lansdale, PA
Makes 6 servings
Prep Time: 15 minutes
Baking Time: 1 hour
2 eggs, beaten
2 cups mashed pumpkin
½ cup sugar
1 Tbsp. flour
¼ tsp. salt
½ cup grated coconut
dash of cinnamon
dash of nutmeg
1 cup milk
8 full-sized marshmallows
1. Combine all ingredients except marshmallows in a large mixing bowl.
2. Pour into a greased 9 x 13 baking dish.
3. Bake at 350° for 30 minutes.
4. Top with marshmallows. Bake an additional 30 minutes.
5. Serve warm or chilled.
