Rita's Bird Nest Cookies

2½ cups flour
1 cup chopped nuts (I used walnuts)
red jam
1 tsp grated lemon rind
1 cup butter
¾ cup sugar
2 eggs, separated
Cream butter, add rind and sugar. Cream well. Beat in egg yolks. Stir in flour gradually. Cover and chill dough an hour. Shape into balls, roll in egg white mixture, then in chopped nuts. Place on greased cookie sheet. Make dent in each and put in a dab of jam. Bake 20-23 minutes in 350 degree oven. Makes about 2½ doz.
